It starts on the nose with a rich notes of spices, pepper, caramel and toasted bread. On the palate, it continues with notes of spices, coffee, caramel, and finishes with a delicate peppery character.
This whiskey is aged more delicately then your typical American Whiskey. In wine making, the use of toasted and lighter char oak barrels is preferred to allow the liquid to mature and retain the delicate flavors of the grape. We apply the same philosophy in the barrels we select to age our whiskey. Results in a delicately aged whiskey and a reliably smooth whiskey.
Uncle Nearest 1856 has a caramel color with a beautiful deep golden hue. Baled hay and pumpkin seeds on the nose with subtle notes of ripe stone fruit and caramel corn. Bold and spicy upfront then mellows with sweet caramel and maple, like biting into an oatmeal raisin cookie. The finish is long and rich. It lingers pleasantly sweet on the palate with notes of vanilla after the spice dissipates.
Many argue that crafting a perfectly well balanced whiskey blend is harder than distilling whiskey itself. We're not saying one or the other, we happen to love both. For years our master distillers have scoured the country for straight bourbons of different ages and mash bills to blend with our own straight bourbon to create a smooth, full bodied whiskey for all enjoy.
On the nose, pleasant notes of caramel, honey and orange. On the palate, it is very smooth, with soft and round notes of caramel and toffee and with a long lasting spicy finish.
